If you’re going to escape the city, then marrying a dairy farmer in Derbyshire is a good start. The next question is how to occupy yourself? Clare Major, a former corporate marketer, solved this problem by setting up Seasoned Cookery School in the elegant, rural courtyard of the Catton Park Estate in 2010 and the business has flourished ever since. The school’s specialty is variety – it offers 35 different courses, taught by 25 specialist chefs (including a sizeable contingent of Masterchef finalists). So, whether you want to learn about smoking food, creating chocolates, making authentic Japanese dishes or cooking game, you are guaranteed a teacher who is an expert in that field. Particularly popular courses include baking, men in the kitchen and Indian cuisine. The atmosphere is cosy and sociable, with no more than 12 people in a class, and the kitchen is well-designed and fluid to work in. From absolute beginners (but not children) through to proficient amateurs, Seasoned will spark the imagination and boost confidence.
