For anyone seeking to brush up their grill skills and graduate beyond the burger-and-banger simplicity of the standard garden smoke-out, the London Barbecue School in Peckham shows you how things should be done. Running from spring to autumn each year, its calendar of courses covers alfresco cooking techniques from around the world, from BBQ-belt America to Japan, including kamado (ceramic barbecue) cookery, low-and-slow cooking, and the wonderful alchemy of the smoker. Classes take place outdoors (naturally), in a sheltered barbecue kitchen equipped with top-flight cooking kit (Kamado Joe ceramic ovens, ProQ smokers and Weber kettle barbecues) and a team of passionate pros to teach you how to use it. As well as arming you with winning barbecue recipes (from smoked short ribs to barbecued fruit and veg), the five-hour classes cover the scientific side of the process too, including temperature control, fuel selection, timing and resting.
