Just in time for the new-year calendar of cookery classes, we’re thrilled to have added a new school to our site. La Cucina Caldesi in London’s Marylebone has now joined our ranks as the only dedicated Italian cookery school in Central London.
With a 12-year history of teaching students how to plate up perfect pasta, pizza and pastries, the school is run by the formidable husband-and-wife team Giancarlo and Katie Caldesi – with a little help on the tutoring side from a visiting contingent of notable chefs and cookery writers – all known for their talent with dishes from the Big Boot.
The Caldesis are pretty much the power couple of regional Italian dining in the UK, with a shelf-load of cookery books to each of their names, the laid-back restaurant-bar Caffé Caldesi next door to the school, and a base in the foodie village of Bray – Caldesi in Campagna. Most of the courses on offer take place in the beautiful Marylebone kitchen, but they also hold regular sessions in Bray, and at their Buckinghamshire home too, making La Cucina Caldesi accessible to budding chefs across the south-east. Their teaching approach is rooted in the conviviality of the Italian kitchen, with everyone amiably chipping in to pull a meal together over a glass or two of wine, rather than working in rigid isolation at separate stations.
Be warned, though; student numbers are kept small (around eight) and many courses book up pronto (especially the one-day pasta workshops and little-bit-of-everything intro session, The Essential Italian), so plan well ahead.
