Cactus Kitchen’s Gin Garden Spring Cocktail

Gin Garden Spring Cocktail

Serves 1

This easy cocktail is an ode to spring, using ingredients that are easy to find or you might already have at home. These can be served in martini glasses or iced highballs.



  • 5 fresh mint leaves (plus extra for garnish)
  • 30ml elderflower cordial
  • 50ml gin
  • 50ml cloudy apple juice


  • cocktail shaker

  • muddler

  • jigger

  • hawthorne strainer

  • glass of your choice

  • ice

  • paper straws



  1. Prepare your glass with crushed ice. You can crush your own ice by putting whole cubes in a sandwich bag and smashing with a rolling pin.

  2. Once crushed, fill the glass 1/3 full.

  3. Add the mint leaves to the shaker and crush using a muddler (or wooden spoon) to release the oils.

  4. Fill the shaker half way up with ice and add the cordial, gin and apple juice. Shake vigorously for about 10 seconds.

  5. Using the hawthorne strainer (or small sieve), pour the drink into the prepared highball glass.

  6. Top up with apple juice if necessary. Add the straw, mint sprigs and serve.
