The nerve centre of Nigel Haworth’s gastronomic empire, Lancashire country-house hotel and restaurant Northcote has earned a reputation – and a Michelin star – for turning Ribble Valley produce into superlative seasonal cuisine. On around seven days each month, the kitchen runs day and half-day courses led by tutor Michael Vanheste and taught by Northcote’s professional chef team, with some run by Northcote head chef Lisa Allen or Haworth himself – these generally cost a bit extra. Classes are pitched at foundation, intermediate or advanced level, depending on the complexity of the topic, but almost all are accessible to enthusiastic home cooks. The Northcote kitchen only has space for eight students at a time, which allows for lots of one-to-one guidance and an intimate atmosphere. For full-on culinary immersion, Northcote offers a no-experience-necessary five-day foundation course, covering the fundamentals of fine-dining cookery, with preferential hotel room rates available to students.
